Strawberry Vanilla Coconut Ice Cream w Fresh Berries

Spring has sprung and this 1healthymother wants a treat!  A delicious frozen dessert that is perfect for someone with a sweet tooth but without the guilt!  A healthy dairy free option for kids and adults too!

Ingredients
  • 2 Cans of full fat coconut milk
  • 500 Grams (17 1/2 oz) fresh strawberries, washed with stalks removed or 1 600 g bag of frozen sliced strawberries (partially thawed)
  • 1 Tsp of vanilla extract
  • Pods from 1 vanilla bean
  • 10 Fresh dates – pitted

Directions

  1. For best results place coconut milk in the fridge 6-12 hours before making the ice cream
  2. Place all of the above ingredients into a high performance blender like a Vitamix
  3. Blend until smooth
  4. Pour the mixture into an ice cream maker and mix until desired consistency is reached (approx 20-25 minutes)
  5. Serve

*As an extra treat, add your favourite toppings (strawberries, blueberries, cherries, cocao crackle, etc.)
