Smoked Salmon, Salad with Granny Smith Apple & Maple Dressing

This is one of my all-time-favourite salads! This is not an April Fools Day joke! Prior to this salad, I was not really a fan of smoked salmon (GASP!!) and I have turned so many people on to smoked salmon through this recipe its nuts.

Dressing
  1. Blend together the first 6 ingredients in a high performance blender.  (I use a Vitamix 5200)
  2. Taste and adjust S&P levels
  3. Set aside

Salad

  1. Toast walnuts in a pan or toaster oven *Be careful not to burn your nuts because they go from not toasted to burn in a matter of seconds!
  2. Slice and cube the avocado
  3. Slice the smoked salmon into bite size pieces
  4. Place lettuce in your serving dish and top with walnuts, avocado and smoked salmon
  5. Toss salad with dressing and serve immediately
