Simple Summer Slaw

A delicious vegan coleslaw

Having a hard time getting your kids to eat their vegetables? Not anymore!   This simple and delicious coleslaw will even have Lachanophobians wanting more.

I can hear some of you right now “I don’t have time to make coleslaw. It’s too much work”. Thanks to President’s Choice (PC), not anymore. Instead of having to shred the cabbage & veggies yourself, you can now choose from one of PC’s 3 different kinds of Fresh, Cut, Washed Slaw – Carrot, Cabbage and Broccoli, then make your own dressing.

This vegan slaw is great for BBQs, picnics, at home, as a side, or even a main dish at lunch. My kids go nuts for this slaw. They love the crunch of the veggies and seeds.

Ingredients

Dressing

  • 2 Tbs of lemon juice or apple cider vinegar
  • 1/4 cup of Soy Free Vegenaise
  • 1/8 Tsp of salt
  • A few cracks of fresh ground pepper
  • ¼ Tsp of Keens dry mustard powder
  • ¼ Tsp of minced onion (dried onion flakes)
  • ¼ Tsp of garlic powder
  • 1 Tsp of poppy seeds

Slaw

Method

  1. Measure out ¼ cup of pumpkin and sunflower seeds and place on a baking sheet and bake for 5 minutes at 350 degrees in a toaster oven *You can also toast in a frying pan on medium heat, but whatever method you choose, be sure to keep your eye on the seeds because they go from perfectly toasted, to burnt in a matter of seconds
  2. While the seeds get toasty, place the dressing ingredients into a bowl and mix until combined *Feel free to adjust any of the ingredients to your liking, I find coleslaw dressing is very personal, so I promise I won’t take offence to any changes you make
  3. If you are eating the slaw within 30 minutes or so, you can combine the slaw and the dressing and refrigerate it until you are ready to serve
  4. I usually like to combine all 3 types of PC slaw to maximize the number of veggies my kids get in one sitting, but only use 1/3 from each bag
  5. If you are transporting the slaw, or it will be a while before eating, my recommendation is to keep the slaw separate from the dressing until about 30 minutes before serving, combine and add the seeds right before eating to ensure they stay nice and crunchy
