Pan Fried Rainbow Trout with Horseradish Mayo

This is a delicious and healthy family dinner inspired by Jaime Oliver that is ready in under 15 minutes.  Even picky eaters will like this one.

Ingredients

  • 4 x rainbow trout fillets skin on and de-boned *Ideally, fish should be from a sustainable source
  • 4 Tbs of olive oil
  • A few sprigs fresh thyme (or 4 Tsp of dried thyme)
  • 4 Tbs of Vegenaise 
  • 1 Tbs of fresh lemon juice
  • Fresh grated horseradish to taste
  • Salt & pepper to taste

Method

Fish

  1. On a medium-high element place a large frying pan
  2. When the pan is hot, add 2 Tbs of olive oil
  3. Sprinkle the thyme, salt and pepper on the skin side of the rainbow trout and place in the pan skin side down for 7 minutes and press into the pan.
  4. Pressing the trout into the pan with a spatula gets the skin nice and crispy (IMHO, this is the best part!)
  5. Brush the non skin side of the trout with olive oil, sprinkle with salt, pepper and thyme then flip and cook for another 5-7 mins until done
  6. Plate and serve with horseradish mayo below

Sauce

  1. While your fish is cooking, place Vegenaise in a bowl
  2. Add lemon juice, salt and pepper to taste
  3. Grate about 4 Tbs of fresh horseradish
  4. Slowly add the horseradish to the Vegenaise until you get the spice level you like

You can serve this with any side dish.  A nice option are beets and steamed baby spinach.
