This is a delicious and healthy family dinner inspired by Jaime Oliver that is ready in under 15 minutes. Even picky eaters will like this one.
Ingredients
- 4 x rainbow trout fillets skin on and de-boned *Ideally, fish should be from a sustainable source
- 4 Tbs of olive oil
- A few sprigs fresh thyme (or 4 Tsp of dried thyme)
- 4 Tbs of Vegenaise
- 1 Tbs of fresh lemon juice
- Fresh grated horseradish to taste
- Salt & pepper to taste
Method
Fish
- On a medium-high element place a large frying pan
- When the pan is hot, add 2 Tbs of olive oil
- Sprinkle the thyme, salt and pepper on the skin side of the rainbow trout and place in the pan skin side down for 7 minutes and press into the pan.
- Pressing the trout into the pan with a spatula gets the skin nice and crispy (IMHO, this is the best part!)
- Brush the non skin side of the trout with olive oil, sprinkle with salt, pepper and thyme then flip and cook for another 5-7 mins until done
- Plate and serve with horseradish mayo below
Sauce
- While your fish is cooking, place Vegenaise in a bowl
- Add lemon juice, salt and pepper to taste
- Grate about 4 Tbs of fresh horseradish
- Slowly add the horseradish to the Vegenaise until you get the spice level you like
You can serve this with any side dish. A nice option are beets and steamed baby spinach.
