Lemon Blueberry Coconut Cake

Lemon Blueberry Coconut Cake

Here’s a quick, easy and healthy crowd pleaser! I’ve made this perfect summer cake a few times now and people just love it. Even those that aren’t on a restricted diet enjoy this cake! The key is getting the cake nice and moist and the glaze nice and creamy.  Thanks to my Aunt Marian for the original recipe.

Counting My Blessings

Bloom

Just a quick post before heading off to bed.

Over the past few weeks I’ve been connecting with old and new friends and it’s made me realize how lucky I am to have these people in my life.

Live in the now and take the time to appreciate and spend time with your friends and loved ones while you can. Don’t take them for granted.  Tell them how much they mean to you every day.

Take time to enjoy the simple things in life like nature and its beauty.  There are so many things to be thankful for if we take the time to pause, breathe and appreciate.

Be Well!

Coco Natura Coconut Aminos

Coco Natura Coconut Aminos

If you have gluten or soy restrictions/allergies then this is a great soya sauce substitute.  Coconut aminos can be used as a direct soya sauce substitute; it can be used in marinades, salad dressings, in soup bases, etc.

The brand I use is Coco Natura Coconut Marinade and buy it at Healthy Planet!  Oh and btw, I highly recommend shopping at Healthy Planet because their prices are sooooooo much cheaper than the other health food stores that I frequent in Toronto.

Happy shopping!

Tuna Casserole

Tuna Casserole

Being gluten & dairy free certainly makes life A LOT more difficult when it comes to meal time.  If you aren’t prepared or don’t have a lot of time on your hands meal planning can be really stressful.  When you are a busy parent, its hard to find the time to look up new recipes that actually taste good and aren’t complicated and time consuming.  Here’s a fairly quick family friendly meal that kids and parents will love.  You can add any veggies you like.  Next time, I might also add carrots, broccoli, cauliflower and baby spinach and will update the post it it turns out.

Blueberry Pancakes

 Blueberry Pancakes

My  2 year old son Liam is NUTS for these oat pancakes.  He literally asks me for ‘Pan – Take’s every day. I find it easiest to make the pancakes on a griddle if you have one, that way you can make 6-8 all at once versus smaller batches in a frying pan.  This recipe calls for blueberries but in a pinch raspberries can be a equally yummy substitute!   Oh, and I usually make a double batch so that I have extras in the fridge/freezer for snacks throughout the week too.

Nature’s BabyLax

Nature's BabyLax

Ever since my son Luke A.K.A. “Dukie” started solids at 6 months he has been constipated and he is 10 months now.  We have literally tried everything (probiotics, giving him water, watering down all his food, straight puréed prunes, rubbing castor oil on his abdomen and lower back, stomach massages, foot massages etc.)  As a last ditch attempt, we tried this mix of fruit and halleluiah it worked!!!

Now whenever Luke goes a day or two without a bowel movement we feed this to him for breakfast, lunch and dinner and it works like a charm (poops every day 1-2 times/day).   If you want to be extra sure this works, we would also give a sippy cup with organic prune juice and water for when he’s über constipated.

Super Alkalizer

Super Alkalizer

Given today is St. Patrick’s Day, I thought I should get in the spirit and post something green!  If you are looking for a quick, easy and believe it or not, tasty way to help alkalize your blood and reduce inflammation, then look no further.

If you have an autoimmune (AI) disease like I do, its best you avoid all alcohol, because it causes inflammation in your body which increases pain and swelling associated with many AI diseases. For those of you without AI, this drink might just be your saviour tomorrow.
