Lemon Blueberry Coconut Cake

Here’s a quick, easy and healthy crowd pleaser! I’ve made this perfect summer cake a few times now and people just love it. Even those that aren’t on a restricted diet enjoy this cake! The key is getting the cake nice and moist and the glaze nice and creamy.  Thanks to my Aunt Marian for the original recipe.

Ingredients

Cake

  • 1/2 Cup of coconut flour
  • 1/3 Cup of agave
  • 1/3 Cup coconut or almond milk
  • 2 Tbs of lemon juice
  • 1 Tbs of lemon zest
  • 3 Tbs of coconut oil, liquid state
  • 1 Tsp of vanilla extract
  • A dash Himalayan salt
  • 3 Drops of organic lemon essential oil, optional
  • 2 Eggs
  • 1 Tsp of baking soda
  • 1 Tsp of apple cider vinegar
  • 1/2 Cup of fresh or frozen blueberries

Glaze

  • 2 Tbs of coconut oil, liquid state
  • 2 Tbs of coconut butter, softened state
  • 2 Tbs of full fat coconut milk
  • 1 Tbs of lemon zest
  • 1 1/2 Tbs of lemon juice
  • 3 Tbs of agave
  • 2 Drops of organic lemon essential oil, optional

Method

Cake

  1. Preheat oven to 350F
  2. Grease a 9” round baking pan with coconut oil
  3. Sift coconut flour into a large mixing bowl making sure to break apart any lumps
  4. Add agave, coconut/almond milk, lemon juice, lemon zest, coconut oil, vanilla, lemon oil, Himalayan salt and mix well
  5. In a separate mixing bowl add eggs and beat lightly
  6. In a small bowl add baking soda and vinegar and mix until it bubbles
  7. Combine liquid ingredients and mix again
  8. Pour liquid ingredients into dry ones and add blueberries and fold together
  9. Pour batter into greased pan and bake for 30 minutes, or until center is firm
  10. Remove from oven and allow to cool
  11. Poke holes in the cake with a straw/chopstick/fork/toothpick

Glaze

  1. While cake is cooling, heat a sauce pan to a medium low heat
  2. Add in all glaze ingredients and whisk together until it is a creamy consistency
  3. Remove from heat and allow to cool slightly
  4. Once the cake and glaze have cooled
  5. Pour the glaze evenly over the top of the cake to allow the glaze to seep through the cake
  6. Once the glaze has started to firm up and the cake has cooled, cut into slices and enjoy
