Vanilla Berry Jam

Here is a really quick and easy recipe for some healthy, super tasty jam. It’s great for the whole family.

Ingredients

  • 500 g (17 1/2 oz) Strawberries cleaned and trimmed
  • 300 g (10 1/2 oz) Raspberries
  • 1 Tsp vanilla extract + pods from 1 vanilla bean
  • 3 Fresh dates, pitted or a little stevia but dates are recommended
  • 4 Tbs chia seeds

Method

  1. Combine half of the strawberries (250 g (8 1/2 oz)), vanilla and dates into a high performance blender like a Vitamix
  2. Blend until smooth
  3. Taste and adjust sweetness if necessary – If it’s too sweet add more raspberries, if you would like it more sweet add 1-2 more dates
  4. Spoon the strawberry puree into a bowl
  5. Add the chia seeds and stir through
  6. Smash the raspberries and add to the strawberry puree
  7. Dice the other 250 g (8 1/2 oz) of strawberries then add to the strawberry puree
  8. Enjoy!

*Please note – Jam should be consumed within 4-5 days because there are no preservatives in it to keep it fresh for longer
