This is one of my all-time-favourite salads! This is not an April Fools Day joke! Prior to this salad, I was not really a fan of smoked salmon (GASP!!) and I have turned so many people on to smoked salmon through this recipe its nuts.
Ingredients
Dressing
- 1 Granny Smith Apple
- 2 Tbsp of Lemon Juice
- 4 Tbsp of Maple Syrup
- 6 Tbsp of Apple Cider Vinegar
- 2/3 Cup of EVOO
- Salt & Pepper to taste
- 1 Package of Organic Girl Baby Spring Mix lettuce
- 2/3 of a Cup of toasted walnuts
- 2-3 Avocado
- 1 Package of President’s Choice Wild Sockeye Smoked Pacific Salmon
Method
Dressing
- Blend together the first 6 ingredients in a high performance blender. (I use a Vitamix 5200)
- Taste and adjust S&P levels
- Set aside
Salad
- Toast walnuts in a pan or toaster oven *Be careful not to burn your nuts because they go from not toasted to burn in a matter of seconds!
- Slice and cube the avocado
- Slice the smoked salmon into bite size pieces
- Place lettuce in your serving dish and top with walnuts, avocado and smoked salmon
- Toss salad with dressing and serve immediately
For all of you smoked salmon/fish haters out there, I dare you to try this recipe and tell me you haven’t been converted!
